Simple Summer Pasta: A Family Favorite

My family has added this simple recipe to the rotation this summer for three simple reasons: t’s yummy, it’s light, and it comes together in under 20 minutes. Bingo! It's the perfect dish for those hot summer evenings when you want something delicious without spending hours in the kitchen. Plus, the fresh ingredients make it taste like summer in a bowl. Trust me, you’re going to love it!


Simple Summer Pasta

Ingredients

  • Angel hair pasta

  • 8 roma tomatoes

  • 8-10 cloves of garlic (this is one recipe where more garlic is better!)

  • 1/2 cup chicken stock

  • Fresh basil

  • Fresh mozzarella

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • Salt and red pepper flakes to taste


Instructions


  1. Mince the garlic and set it aside. Take four of your tomatoes and cut into a fine dice. Chop the other four tomatoes into a larger dice.

  2. Heat your pan over low heat and add the olive oil. Add the garlic and stir constantly for approximately 2 minutes to ensure it doesn’t burn. Next, add the finely diced tomatoes, butter, chicken stock, salt and pepper. Let simmer for approximately 5 minutes.

  3. Cook your pasta according to the package directions. Note: Angel hair pasta cooks in only 3-4 minutes so don't go walkin' away! Strain your pasta making sure to reserve 1/2 cup of pasta water.

  4. Add the largely chopped tomatoes to your sauce and stir. Next, add your pasta and enough pasta water until the consistency of the dish reaches the perfection.

  5. Top with a ton of basil, fresh mozzarella, red pepper flakes and enjoy!
